多肉中毒還沒有找到解藥啊!昨天已經在園藝中心買了三盆,本來就沒有打算今天再買的。前幾個星期天氣太熱都沒去露天市場了,今天天氣涼涼清爽,就往那兒走一走,只想去那的多肉攤位看看而已。心裡是這樣告訴自己想看看而已啦,不過知道是一看就抵抗不了誘惑會再買的啦,哈哈!<br />
繞了一圈攤位看中了一盆五塊錢東雲系的肉肉就拿了。然後再仔細看一個盒子裡有十幾盆都減成一塊錢一盆的肉肉,都是有老桩趨向的,頭重腳輕的。大概是一些比較賣不銷的品種吧,已經長大過小盆了。哇,看一下裡面有兩盆我很喜歡但還沒擁有的喔!一個是銘月,另一個是藍豆。那個攤位的肉肉最便宜的就五塊錢一盆,然後就七、九塊錢高到稀有品種二三十塊一小盆。另一個我常去的園藝中心最便宜的小盆肉肉一盆是四塊錢,然後較貴小盆是五塊半,之後就是比較大盆的了。所以一塊錢一盆是不可錯過的機會。<br />
其實銘月在園藝中心有見到,只是都是比較大盆的,沒見小盆的,所以都沒買。<br />

藍豆呢,幾個月的瘋狂買肉都沒見到它的蹤影,所以真的是一個驚喜的發現。而且因為它個頭小還被幾顆高大的肉肉葉片蓋在下面第一眼還看不到,是我把一盆大頭的拿出來看看才看到的。<br />

周末天氣好,來把幾個比較喜歡的肉肉換大一點的盆,從7釐米方盆換成統一的10釐米盆。考慮到要買美麗的新盆還是簡單不上眼的便宜盆?最後還是決定買便宜的盆。這樣肉肉才能當主角,不會被漂亮的盆佔上風。翻盆後拍了照留念,也備以後肉肉長大做對比圖。<br />

上次提到因為被可愛的<a target="_blank" href="http://sdkopitiam.blogspot.com.au/2012/12/blog-post.html">熊童子</a>迷倒而開始中了多肉毒,很高興的熊童子就非常容易買到了,而且還買到兩個品種,原種和黃斑錦的。不過熊童子並不是唯一迷倒我的,其中讓我看了網上肉迷們發的照片後,愛不釋手的還算有火祭、靜夜和虹之玉錦,特別是它們冬天時變成紅嘟嘟,粉艷艷的樣子… 可是這幾個品種在附近的花卉店或園藝中心都找不到。可能季節不對,不是它們最美麗的時候,夏天裡店家沒有擺賣。所以從不網購得我,還是抵抗不了誘惑,終於在去年年底發了訂單,網購了這幾個非常喜歡的品種(買了五種,其實是訂了六種,第六種姬朧月當時沒貨沒買到)。<br />
因某種原因~佳節假期等等~網店遲了發貨,讓我望穿秋水後,這個星期貨終於收到了。等久了、盼望多了,寶貝們收到手中時,覺得更是喜悅和驚喜啊!現在這個年代,什麼都是即時擁有、不必等待、不用盼望,太容易、衝動做的事情也不必定是好的。其實說真的,如果有點等待、有點盼望、收獲時也覺得更珍貴吧,呵呵!<br />
驚喜的是雖然買的全部是選小型號的,想不到打開包裝後,個型形狀還不是特別小喔,除了自然小型的虹之玉錦(有3株喔)之外,其它的頭直徑多少都有五六釐米大小的,真不錯說,嘿嘿!<br />
買的五個品種分別是火祭、紅邊靜夜、虹之玉錦、黛比和紫珍珠。其中的紅邊靜夜是糾纏好一陣子才決定不買原種的靜夜。一是紅邊靜夜是比靜夜大顆(太小的靜夜怕容易養不好),二是紅邊靜夜還比靜夜便宜一點,因為不知道好不好養,不要花太多錢以免種掛了。如果好養的話,以後才再買靜夜吧!<br />
本來知道貨這個星期會到的,上個周末去了一趟K-mart想買幾個小盆預備要拿來種這些新寶貝的,可是一走進去就看到一個擺了滿滿不是很普通的長壽花和一些沒有名字的多肉陳列,一看到,要買花盆的念頭就被忘的一乾二淨,就在站在那挑了一陣子,最後拿了兩盆長壽花就直接去付款了,回家半路上才想起忘了花盆,真的是被肉肉搞糊塗了,哈哈。沒辦法了,現在暫時就先一起種進家裡一個空的半長盆裡拼盆一下好了。如果長的快的話,秋天再來幫它們分開種吧!<br />

新的一年到來了,時間過的真快!自從去年十一月開始掉入多肉的陷阱後,買的、撿的、加上以前的幾盆,算算短短兩個月內也收集了二三十個品種!真的太瘋狂了。還好多肉植物不需要很多空間,不然都沒有地方種了,呵呵。雖然路邊綠化帶採回來扦插的枝條或葉片多數是很普通的,到處都能見到的品種,卻是找來找去還是不確定名字…所以在此暫時不記錄,先來統一記錄下買到的品種。<br />

忽冷忽熱的十二月天,搞得陽台的花草不知該瘋長還是休眠去了!大熱天長的最開心的應該算是天竺葵(geranium)、矮牽牛(petunia)、舞春花(calibrachoa 就是小花矮牽牛又名小鈴)和貝可兒(petchoa 是矮牽牛和小鈴的交配種)了。上個月長的還蠻好的六倍利好幾株在幾天40度的氣溫中被曬乾了…<br />

<strike>櫻桃色</strike>(紅霓虹色)的貝可兒(Petchoa <strike>Cherry</strike> ~ 哈哈,搞錯了,再查一下應該是Neon Rose)。這株是賺了,哈哈。大約十月在花卉店裡看到盛開時是十塊半一盆吧,當時沒買。後來十一月中旬被減半價到5塊錢,只有三盆都沒有花而且徒長了。隨便挑了一盆,當時還心裡希望是紅色的。拿回家修剪後等待它開花,十二月中旬終於開花了,哇塞,真的挑中了,是紅色的,高興喔!<br />

話說今年重點是打算在陽台上種菜嘛,可是天氣最近才開始轉暖。十月播的種子遲遲就長不大,茄子發了三顆,勝瓜就只發了一顆,還有韭菜種子雖然發的比較多,可是還是小小的有那零零亂亂的感覺。不過買苗的甜蘿勒、蝦夷蔥、辣椒和薄荷都長的還好。甜蘿勒與蝦夷蔥已經拿來做菜了!蕃茄也開始開花了,希望能快快結果,可是這兩天發現葉子被蟲咬得全是洞洞,今天早上終於抓到了兩只毛蟲,嘿嘿!<br />
就是因為想種菜,這兩個月有空就上網找資料,可是喔可是,一上種花菜的中文論壇網站,立刻被多肉植物迷倒了!特別是這些多肉植物因通過日本園藝的影響,取了非常動聽的名字,毒了真的一發不可收拾。恨不得都每一種都種一盆!<br />
第一種徹底迷倒我的就是熊童子(Cotyledon tomentosa)!在這之前都不知有這種植物的存在啊!今天終於如願以償找到了,擁有了我的第一盆熊童子,7塊錢買的。可是不是原種綠色的,攤主說今天沒有原種貨,只有帶錦有黃斑的品種(Cotyledon tomentosa variegata),看看是不是特別可愛的樣子!胖胖又毛茸茸的葉子,還有那些像熊爪的紅色邊沿!<br />

同時也買了姬星(Crassula “Tom Thumb”)和觀音蓮(Sempervivum tectorum),兩盆都是5塊錢。也非常喜歡。兩盆都是超小的。姬星的黑色四方盆的盆口只有6cm,觀音蓮的小紅陶盆是5cm大小。姬星越看越喜歡,真是迷你植物,那麼小的!<br />

這個周末不止買了這三盆,昨天也是為了找熊童子跑到另一家花卉店,可是找不到卻買了藍松(Senecio serpens)和條紋十二卷(Haworthia fasciata)。藍松也非常可愛吧,像一串串藍色的香蕉。條紋十二卷盆裡還有兩個小寶寶,是不是可以算是買一送二了,哈哈!雖然它的葉子尖已經發乾,也不管那麼多了。先養養一陣子看看吧,那些葉片以後也會老了長新葉子的!<br />

十一月初買的淡紫色小花矮牽牛(網上現在都把它稱為百萬小鈴,可是Million Bells百萬小鈴只是小花矮牽牛其中一個比較出名的系列,我買的這個是Cabaret卡巴莱系列),買回來的樣子。拍出來的顏色卻成藍色了,糟!現在正為它摘心整型沒花了,等它夏天盛開時再拍照。<br />

每隔幾年在春天的時候就會瘋狂的在陽台上亂種一大堆的花草。可是每每夏天一到氣溫升高到40多度時,很多剛剛種活的那些花草一下子就被高溫弄的蔫了,真的拿它無可奈何啊!<br />
今年又再度瘋狂種了,除了開始種少許的菜類外-唉,真希望它們能平安過夏有點收穫,哈哈-也來個有多肉植物的窗台。至少多肉的植物比較容易熬過高溫的季節,有時忘了澆水也不至於導致他們立刻上天堂吧,嘿嘿!<br />
今天到附近的露天周末市場一個賣多肉植物的攤位去逛一逛,敗了兩小盆肉肉回來。<br />

大葉翡翠珠 - 攤主說是大葉品種,粒型的葉子可長到彈珠大小,普通品種的只有青豆粒大小。枝條捲不開啊,一圈圈捲起來的枝條下面好像都生根了!<br />

左上的好像是叫白銀之舞、右上的不確定(紅輝炎?)、下面的好像是乙女心。這三個一套的小盆買了好幾年了,空空的擺著沒用過,終於派上用場了,哈哈!<br />

分不清是假昙花還是落花之舞,品種是Starlight(星光)。三年前差一點上天堂了,搶救後今年再度開始開花了,雖然僅僅只有3朵,也覺得好開心!<br />

右邊是正在搶救中的金邊綠法師(蓮花掌)。每兩三年越冬後就給我爛根,去年已經越長越小,今年只有一小株又爛根了,唉!把它剪成兩段希望能插活。很可惜以前長的茂盛時從沒有給它拍過照。左邊是上個月也被人家丟出去的黑法師,摘了還活著的頂端正在扦插中。<br />

中毒啦!中了花毒!最近因為開始陽台種菜,就在網上一些花菜論壇上溜,卻真的被人家的花花照片看著了迷。以前看到美麗的花兒,看了也算了,也沒想去拍照。自己種的一些普通的花兒更不用說了,開了花欣賞幾天也滿足了。<br />
本來只想在這兒紀錄一些陽台種菜的心得,不過最近才播的菜菜種子有的才發芽,有的還沒有動靜,所以還沒有什麼好報告的。不過九月尾買的矮牽牛苗已經開始開花,還有朱頂紅也開花了。而且在論壇上看了就迷上的重瓣鳳仙,特地在周末跑去花卉店花了八塊錢買回來的一盆粉紅色的重鳳也非常漂亮,就先把這些花兒顯一顯吧!<br />

今年朱頂紅的第一朵花,很可惜星期天澆花時把三朵花的其中一朵不小心給扯斷了剩下兩朵。還好下面還有另一枝花枝,而另一盆也有一枝四朵花待放。<br />

上個星期又去超市想看看還有什麼菜苗可以買的,卻看到一些他們賣一星期後剩下的花苗從3塊錢一缽6苗的減到1塊錢一缽。太便宜了啊!順手就買了4缽花苗, 有翠菊(aster)、雞冠花(celosia)、金魚草(snapdragon)和美女櫻(verbena)。<br />
看看也沒什麼菜苗自己想種的,不過買了一株草莓、一株辣椒和一株薄荷,呵呵。然後跑去華人雜貨店買種子算了。因為陽台空間有限,菜市便宜的菜就不要自己種了,種一些比較貴而且難買的菜比較划算。找呀找啊後,終於決定就買了中國長茄子、勝瓜、韭菜和九層塔的種子,希望能種成功嘍!<br />

最近幾個月都忽略了我的這間咖啡店。過了好一陣子沒有打中文,現在要打又覺得打的好辛苦。哈哈還是勉強勉強了吧。<br />
春天已經到來了,今年打算在公寓小小的陽台上種一些蔬菜。雖然幾年來陽台上一直都有種幾盆容易照顧的花卉像天竺葵、文竹、棕竹、秋海棠之類的,不過還是覺得讓那小小的空間浪費了。不然加多種些蔬菜果類的比較划算。<br />
即然決定了,而且超市裡最近兩個星期都擺了很多比較普遍的菜苗花苗在賣,看到我眼花了。隨便搬了一小株矮檸檬、兩株番茄苗(其實是一小盆一株苗的,不過我挑的一盆裡即然有兩株,嘿!)、一小盤甜蘿勒苗和一小盤蝦夷蔥苗,還加了一小盤矮牽牛苗與一小盤翠蝶花苗回家。這是開始的一些啦,還計畫下個周末再買多幾種,先看看陽台上能擠多少盆,哈哈,有點妄想吧!其實陽台是向東看大馬路的,前門口向西的庭院有一道走廊還可以擺幾盆。<br />

5〉將廚房紙巾包起青辣椒圈,稍微輕輕擠一下把多餘水份擠乾。<br />
6〉放入玻璃瓶裡,再把糖鹽醋灌入淹沒青辣椒即可。<br />

自從上次胡亂做了自創的<a target="_blank" href="http://sdkopitiam.blogspot.com.au/2010/12/blog-post_18.html"><i>黑芝麻麵包圈</i></a>之後,非常喜歡那種包入黑洋酥餡的麵包口味。前幾天參考麵包食譜時,在一本書裡看到一個<i>綠茶紅豆麵包</i>的食譜,雖然原食譜中的內餡是紅豆麻糬餡,不過麵包上面是鋪一層加了黑芝麻的綠茶糊。我把食譜稍微改良把內餡改成黑芝麻口味的餡。剛好家中有兩種上次做點心剩下的黑芝麻餡;一種就是黑洋酥,另一種是黑芝麻豆沙餡。好吧!就分別包這兩種內餡試一試。哈哈,不錯也,有綠茶香的黑芝麻麵包很棒喔!而且那麵包上面烤成酥脆的綠茶糊也蠻好吃的。<br />

這次我採用小條型的硬質紙模來烤。這是因為這些麵包上面擠上麵糊的,像墨西哥糊這類的,在烤時麵糊會往下流。用紙模烤就是防擠麵糊時,如果份量掌握不好而擠太多的話,紙模能容納這些流下的麵糊,而不會讓麵糊流滿到烤盤上浪費掉。不過如果沒有這種紙模其實也沒關係,就直接把整型後的麵糰排放在鋪了烤盤紙的烤盤上,這時小心一點不要擠上太多麵糊即可。不然另一個方法就是像做排包的方式把麵糰排放靠近一點,讓它們發酵後緊貼一起,這樣在一排緊貼的麵糰上擠上麵糊時,份量也比較好控制。<br />

<strong>【製作步驟】</strong><br />
1)製作<a target="_blank" href="http://sdkopitiam.blogspot.com/2009/08/blog-post.html">湯種甜麵糰</a>至步驟2的基本發酵完成。<br />
2〉準備餡料:將黑芝麻豆沙餡分割成大約30克大小、將黑洋酥分成每份大約一大匙的份量備用。<br />
3〉製作抹茶麵糊:將奶油砂糖拌勻,再加入蛋充份打勻。加入低筋麵粉、抹茶粉、黑芝麻拌勻,製成抹茶麵糊。<br />
4〉將基本發酵完成的麵糰排氣、分割成6份(每份大約75克),一一滾圓。鬆弛10分鐘(中間發酵)。<br />
5〉將鬆弛完成的麵糰擀開。把餡放在麵糰中間,由上而下把餡捲入麵糰中間,壓緊收口。再稍微整型成長條狀約15cm長。<br />

6〉將收口朝下放入15cm長型紙模內,排入烤盤,蓋上保鮮膜作最後發酵至紙模的7分滿即可。<br />
7〉將抹茶麵糊用擠花袋均勻地擠在麵糰上面。<br />

2)將基本發酵完的麵糰排氣、滾圓。鬆弛10分鐘(中間發酵)。<br />

3)把滾圓鬆弛後的麵糰用捍麵棍捍扁成約30cm×30cm的方形麵皮(圖1)。均勻鋪上椰茸餡,在麵皮一邊的邊緣留約5cm寬麵皮別鋪餡以利收口。將麵皮捲起,捲緊,在收口處捏合收緊(圖2)。<br />

4)把麵糰分割成6份(圖3),一一放入6個直徑9cm的紙模中(圖4)。如果沒有紙模就直接排放在鋪了烤盤紙的烤盤上即可。蓋上保鮮膜作最後發酵至約兩倍大(圖5)。<br />

5. 麵糰搓成長條狀,分成8~10等份,麵糰壓扁後擀成麵皮,包入餡料。<br />

Grind the peanuts finely. Preheat oven to 170°C.<br />
Beat butter, sugars and salt until light and fluffy. Add egg, mix well. Add peanut butter, mix well. Add sifted flour, baking soda and ground peanut and form into a soft dough.<br />
Divide mixture into small balls, 10g each. Place into baking tray lined with baking paper, and flatten each ball.<br />
Bake for 10 minutes until golden brown. Cool before storing in airtight container.<br />

做法:<br />
1) 先将姜切片,葱切成小段备用。<br />
2) 再将鲳鱼修剪掉鱼鳍後,打斜切成厚片,再放入大碗中,加入3大匙酱油略腌後,将鱼片放入油锅中二次炸到熟透酥脆後,起锅沥油备用。<br />
3) 锅中倒入1大匙油,先炒香姜片、八角和葱段,再加入2大匙酱油和糖後,将爆香料捞除,加入酒煮滚後,改成中火。<br />

<b>西瓜稀饭</b> (Feb 29/Mar 1)<br />
材料: 红西瓜1个(约10斤) 绿豆1/2杯 圆糯米1又1/2杯 冰糖随意<br />
做法:<br />
1) 将西瓜打成果汁备用。<br />
2) 把绿豆加上圆糯米用水泡1~2小时。<br />
3) 最後将西瓜汁、绿豆及糯米放入焖烧锅内锅以大火煮开後,移入外锅中焖1小时即可。<br />
<br />
<b>雙豆粉絲燉肉</b> (Mar 5/6)<br />
材料:小排骨半斤 四季豆2斤 馬鈴薯2個 粉絲1把<br />
調味料:冰糖少許 醬油3大匙 酒適量 水適量<br />
作法:<br />
1) 將馬鈴薯去皮切成大的滾刀塊狀;四季豆洗淨去蒂、粗絲並折成對半;粉絲剪段泡水3分鐘至軟撈出瀝乾備用。<br />
2) 起3~4大匙油鍋,將小排骨入鍋爆香,走油一下至變色定型後,放入四季豆拌炒一下,放入馬鈴薯炒香,再乾炒一下加入酒、醬油、冰糖翻炒一下。<br />
3) 續加入能淹過食材的水,等大火煮開後,再蓋上鍋蓋,轉成小火燉煮20~30分鐘,待湯汁快收乾時,加入粉絲燜煮至再燒開即可。<br />

<b>芋泥蛋糕捲 (孟兆慶)</b><br />
<i>材料:</i><br />
<b>蛋糕體:</b>全蛋 200克(約4個)、蛋黃 20公克(約1個)、細砂糖 80公克、低筋麵粉 85公克、玉米粉 2小匙、無鹽奶油 25公克、鮮奶 35公克<br />
<b>芋泥餡:</b>芋頭泥 250公克、糖粉 50公克、動物性鮮奶油 50公克、無鹽奶油 30公克<br />
<i>作法:</i><br />
1.無鹽奶油、鮮奶放入容器內,以隔水加熱方式將奶油加熱融化備用。<br />
2.全蛋、蛋黃加細砂糖用打蛋器打發。<br />
3.篩入麵粉,用橡皮刮刀拌勻,接著加入融化後的做法(1)的材料。<br />
4.繼續用橡皮刮刀輕輕地拌勻,再倒入36x26公分的烤盤內,將麵糊抹平。<br />
5.烤箱預熱後,以上火190°C、下火180°C烘烤約15分鐘左右。<br />
6.芋泥餡:芋頭泥趁熱加入無鹽奶油攪拌均勻,並加入糖粉以及鮮奶油拌勻。<br />
7.蛋糕體放涼後,鋪上均勻的芋泥餡再捲起,定型後即可切塊。<br />

<i>材料:</i><br />
<b>麵包體:</b>高筋麵粉 200公克、細砂糖 30公克、鹽 1/4茶匙、即溶酵母粉 3公克(1/2茶匙+1/4茶匙)、水 125公克、無鹽奶油 15公克<br />
<b>芋泥餡:</b>芋頭泥 150公克、糖粉 20公克、無鹽奶油 20公克<br />
<b>裝飾:</b>杏仁片 15公克<br />
<i>作法:</i><br />
1.麵包體:除了無鹽奶油外,將所有材料全部混合,用手搓揉成光滑狀。<br />
2.加入無鹽奶油,繼續揉成具延展性的麵糰。<br />
3.麵糰放入容器內並蓋上保鮮膜,進行基本發酵約80分鐘。<br />
4.芋泥餡:芋頭泥趁熱加入糖粉以及無鹽奶油攪拌均勻。<br />
5.麵糰分割成3等份,滾圓後蓋上保鮮膜,鬆弛約10分鐘。<br />
6.麵糰擀成橢圓型的片狀,分別鋪上芋泥餡並將兩邊黏合成長條形,再編成辮子狀,放入烤盤蓋上保鮮膜,進行最後發酵約30分鐘。<br />
7.麵糰表面刷上均勻的蛋液,再撒上均勻的杏仁片。<br />
8.放入已預熱的烤箱中,以上火190℃、下火160℃烘烤約20分鐘。<br />

<strong>【製作步驟】</strong><br />
1〉芒果肉切小丁。<br />
2〉滾水沖入吉利丁粉中,攪均勻至吉利丁粉溶化,備用。<br />
3〉蛋打散,加糖、鹽再打均勻。<br />
4〉花奶煮滾,煮時要攪以免鍋底燒焦。然後徐徐灌入蛋液中,邊灌邊攪避免煮成蛋花。<br />
5〉過濾倒回鍋中,以中火加熱約2分鐘,要不停的攪。再過濾倒入吉利丁液中攪均勻。放涼約5-10分鐘後,把芒果丁加入拌均勻即可。<br />
6〉倒進模型中,放入冷藏庫中約4小時成形即可。<br />

藍莓的季節又到來了!買了幾盒,除了新鮮當水果吃外,拿了一盒來做杯子蛋糕吧.
參考了基本杯子蛋糕的食譜改良一下,加了酸奶油和西點杏仁粉,哇,既然非常蓬鬆柔軟喔!
只不過分量多了一些,沒有考慮清楚,就勉強把全部麵糊填入12個瑪芬杯子模里.糟糕!烤好後,蛋糕都溢出成蘑菇頂的形狀,哈哈哈!

<strong>酸奶油杯子蛋糕:</strong>
奶油和糖打發.蛋一個一個加入打均勻.加入香精和酸奶油攪均勻.麵粉和杏仁粉過篩後加入攪均勻.舀入紙杯,鋪上藍莓,以180°C烤20至25分鐘即可.
<strong>藍莓奶油霜:</strong>
藍莓搗爛過濾取果汁.奶油和糖打發.徐徐加入藍莓果汁再打發即可.
